In fact, the Tomato, Olive Oil and Basil Salad isn't cooked at all in the conventional sense: raw tomatoes are left to 'cook' in lemon juice and sea salt for a few minutes before being sprinkled with fresh basil leaves and served as a beautifully light starter.
Learn to cook fish to perfection...
Fresh raw tuna is marinated in lemon juice, fresh thyme and olive oil, then given a fierce brief searing in a cast iron ridged griddle pan.
This lends some great flavour to the outside, leaving the inside just cooked - exactly as tuna should be. It's then served on a bed of rocket with oven-dried cherry tomatoes and drizzled with a mild chili oil dressing.
Unusual favour combinations...
Glazed lemon tart with basil ice cream. Well, where to begin? Learn to cook a lemon-infused Crème Anglaise over a bain marie; classic blind-baked sweet pastry; glazing the top of the tart with the flame of a blowtorch.
The ice cream is special - learn to cook a classic ice cream base of Crème Anglaise, but this time infused with handfuls of fresh basil leaves. There, guaranteed to send you home from your cooking holiday feeling proud of your new-found cooking skills.
