Typical Itinerary

This is how a typical cooking holiday week pans out. 

Although the dishes and ingredients will change according to the seasons and your food preferences, the basic layout of the week is pretty much what you see here...

Sunday
Welcome evening meal, your chance to relax and settle in.

 

Monday

Lunch
Classic French Omelette
Sounds simple, but it's not that easy.  Served with Salade Verte, we'll cover dressings at the same time.

Dinner
Grilled Fillet of Seabass, Sautéed Spinach and New Season’s Ratte Potatoes
with a Chardonnay, Lemon and Chive Butter Sauce
We’ll fillet the whole fish and make a stock from the trimmings.  Served with a classic French mounted Butter sauce (Monte au Beurre) and presented restaurant-style

Chocolate Pots with Orange & Almond Biscuits and a Glass of Chilled Monbazillac
Decadent fondant chocolate served in little cups, with crisp biscuits for dunking.

 

Tuesday

Lunch
Hand-Made Shrimp Raviolis with Fresh Chili Sauce
We’ll get the pasta machines out and make our own raviolis filled with fresh prawns, served in a real chilli

Dinner
Garlic, Orange and Rosemary-Studded Roast Leg of Lamb cooked in a “Haybox”, with Sauce Provençal and Pommes Dauphinoise
Roasted for just 25 minutes, the secret to finishing this great lamb dish lies in the resting ;-)

Tarte Tatin with Toffee Ice Cream
Classic upside-down apple tart with the easiest toffee ice cream ever!

 

Wednesday

A nice relaxing trip to Sarlat market – the jewel of the Dordogne - where we’ll source some ingredients to cook later on

Lunch
Pan-Fried Organic Chicken, Watercress and Chickpea Salad with a Lemony Yoghurt Dressing
and Griddled Garlic ‘Soldiers’

Dinner
After lunch, the choice is yours: either spend the afternoon cooking your own dinner, or have the afternoon and evening off: you could eat out at one of the sixty or so restaurants in Sarlat or nearby Montignac (we’ll point you in the direction of our favourites, and, if you don’t drive, for less than the cost of a taxi ride,
we’ll even take you there and pick you up when you’re finished!). 

Alternatively, we could visit the Night Market at our local village: these only occur in the summer and consist of local stalls selling all manner hot and cold regional foods (and wine) for us to buy then consume on trestle tables within the market – a great evening out (if the weather is kind).

Moules Marinières

Dinner
Magret de Canard with Summer Vegetables and a Three Citrus Jus
A contemporary spin on Duck a l’Orange: pan-fried duck breast served with vibrant summer veg and a lemon, lime and orange dressing

Panna Cotta with Fresh Seasonal Summer Fruits
Lightly set vanilla cream with locally grown fruits

 

Friday

Lunch
Orange and Chorizo Salad with Parmesan and an Orange, Walnut Oil and Grain Mustard Vinaigrette.
Served with Chunky Garlic and Rosemary Croutons
Lots of pre-prep for this beautiful salad, so don’t be fooled by its apparent simplicity.  Topped with a classically poached free range egg.

After lunch, a trip to the oldest water-powered walnut oil mill in the Dordogne – a great visit, but there’s lots of low whirring
machinery, so don’t raise your hand to ask a question!  Then, we can either have a leisurely drive through some pretty villages, ending up with a coffee and an ice cream in nearby Montignac, or chill out at Bombel with a swim (or even an afternoon nap!).

Dinner
In the evening it’s off to our favourite restaurant (where discerning locals eat) for a farewell evening meal.
